We hope you enjoy making Odran's Hearty Irish Stew at home, this recipe is ideal for St. Patrick's Day
800 g stewing lamb or 6 gigot lamb chops
4 large carrots
1 small turnip
6 large potatoes
sprig of rosemary and thyme
salt , white pepper ,
1/2 head of green cabbage
bunch of curly parsley
Firt place the lamb in a pot of cold water, just enough to cover the meat. Bring to the boil and then refresh under cold water.
Prepare all your vegetables by peeling and cutting into small chunks - just remember don't cut them too small.
Place all your prepared vegetables along with the rosemary and thyme in a pot, add the lamb and cover with water - about an inch over the ingredients.
Season with salt and pepper and bring to the boil.
Peel the potatoes and cut in half. After an hour add the potatoes to the pot and continue to cook slowly for another 30 minutes.
Now is the time to add the cabbage, cook until soft.
Add extra water at this stage if you feel the stew is too dry.
Finally add the chopped parsley, check the seasoning and ENJOY!
